Everything you hear about Bali is true. It's beautiful, peaceful, laid back, and full of culture. I only spent three nights in Bali, but had an amazing time enjoying life at a resort (see my review on the Four Seasons Jimbaran Bay) and exploring Ubud.
If you do decide to go to Bali, consider making an extended stay. I would say at least a week and two would be better. Getting around Bali is slow and it is worth slowing down to the pace of life there.
