The first thing is, is that you don't need to be in a luxurious hotel. There are many smaller hotels all over the beach area in Waikiki. The food situation can be as simple or as extravagant as you please. From McDonald's for the kids, to a fun night out at maybe Don Ho's for the adults. Waikiki is more of a night-life fun spot, but still, there is so much to see and do in the daylight hours. One of the most impressive areas is battleship row at Pearl Harbor.
